Fuel for the body! My all time favorite fish with my all time favorite mix of spices — how can you go wrong? I am sure we all have a favorite fish if we like fish at all. Chilean Sea bass, sole, halibut and tilapia are some of my favorites. But salmon — I LOVE salmon. Eating out you can always find a great salmon to try and we love salmon! The best part about salmon is how easy it is to cook. The most important thing for fish is that you don\’t overcook it because it will be dry and rubbery – so be sure not to cook any longer than 20-25 minutes.
Salmon Dilly Pesto Style!
BBQ cut salmon and filet for oven baking
Marinate the salmon in a glass baking dish with 1 TBSP Lemon juice, 1 TBSP olive oil, 2 TBSP white wine and top with Penzey\’s Dill Weed.
Spread a thin layer of pesto (home made or its available from Trader Joes or other gourmet food stores)
Cover baking dish with aluminum foil and bake for 20-25 minutes at 350 degrees.
Serve over sautéed fresh spinach and garlic

This is an absolute treat and favorite at our house! Try it and you will not be disappointed. Low in fat high in nutrients! Super yummy super food!
