This is a sixth in a series of posts celebrating whole food – fresh food and creative ways to prepare it as fuel for your body. Fuel for the body! Celebrating the first day of spring means it\’s time to bring in more salads to our diets! This is one of my all time favorite salads because of the added benefit of the high protein power in the beans.
- One can each of chickpeas kidney beans black beans
- One diced cucumbers onions
- 1/8 cup olive oil
- 1/8 cup apple cider vinegar
- One red pepper
- Spice with parsley alt and pepper
- One avocado diced
- One tbsp Lime juice to taste
There you have it super yummy high-protein meal! I love the colors and the taste of this amazing meal! Enjoy!
